... and now we rest. We officially finished picking on the 29th of April and the last ferment was pressed out on the 10th May. We had a fantastic season with the dry, but cooler weather allowing picking decisions to be made perfectly and slow flavour development adding to the complexity of the wines. The whites are looking fantastic, with great natural acidity and complex flavours. Riesling being the stand out. Shiraz is bright and fruity with great colour intensity. Cabernet shows great varietal characters and bold, ripe tannin complexity. With yields across the rest of the country being significantly reduced due to the heat, it reminds us how important winter rainfall and a quality source of underground water is....
